My next trip destination is Oregon, one of the coastal states making up the Pacific Northwest (PNW).



However, the rest of this state's attractions should not be ignored. The myriad landscape-from beaches, deserts, rainforests, mountains, evergreen forests, to fertile farming valleys - I am told is extraordinarily beautiful.



I'll start off the trip in Portland before taking a road trip to Central / Eastern Oregon to visit part of my boyfriend's extended family.

• Powell's Bookstore
• Stumptown Coffee
• Ride Bikes Along the River
• Voodoo Doughnuts 
• Shop at Local Boutiques 
• Japanese Garden 
• Rose Garden 

Since we'll be staying a week I hope it will be enough time to get a sense of OR's largest city before seeing more of the countryside and getting away from more of the crowded tourist attractions. I am hoping to getting a better sense of where my boyfriend grew up and spend time in nature (and a few boutiques!).

This outfit was all about color blocking and reminded me of art deco. That, as well as the contrasting colors and graphic lines, inspired this room. 

In my mind, I can see this living room in an apartment inside a historic building in San Francisco or London. I chose a mixture of square, graphic lines and organic curves-just like the couch with its mid-century modern frame but the rounded legs and side pillows add depth and dimension. I may have gone more dramatic with the two tone and color blocking than I would typically-but if you can't be daring in your online made up design schemes....THEN WHEN??? PS: I secretly was decorating this in my mind for a posh guy friend who has a gold bar cart and throws lots of cocktail parties.

• 2 ripe medium avocados 
• 1/3 cup cocoa powder 
• 1/4 cup honey or raw agave nectar for vegan recipe (don't use maple, as it overpowers the pudding)
• 1/2 coconut cup milk (or any of your choice-soy, almond milk, etc.) 
• 1 1/2 teaspoon vanilla extract

Instructions:

Blend all ingredients in a food processor, until smooth and creamy. If pudding is too thick, add more milk or if it is too thin add more avocado. Chill pudding for 1 hour before serving. Top with fresh strawberries or raspberries and blueberries. If you have leftovers you can freeze them in popsicle molds for chocolate fudge pops (a personal favorite of mine!).
